This South American oil-based condiment has been traditionally used for basting meat on the barbeque. The intense flavours from the oil enhances the flavours from the meat. Chimichurri is also excellent as a sauté base for vegetable and mushroom dishes.
This condiment contains healthy fats, vitamin C, iron and other minerals. Garlic has been traditionally used for enhancing the immune system and is anti-parasitic.
1/4 cup olive oil
1 tbsp red wine vinegar
1/4 cup chopped parsley
1/2 red chilli, deseeded
1/2 tsp dried oregano
1/2 tsp celtic sea salt
1/4 tsp freshly ground black pepper
Place garlic, chilli, parsley and some of the oil in mortar and pound with pestle. This helps to release the aromas into the oil. Do don’t mash, keep the mixture chunky.
Add mixture to the rest of the ingredients and stir. The mixture will keep in the refrigerator for a few days.
