This Immune Boosting Shiitake Elixir will help to boost your immunity and give you extra energy. Get on top of the cold and flu season by getting plenty of rest, hydration and nourishment. Shiitake mushrooms are not only nutrient dense but they also add intense meaty flavour to vegetable stock or chicken bone broth.

ingredients:

1/2 clove garlic

sprig fresh parsley

2 cups chicken bone broth or vegetable stock

handful of sliced Shiitake mushrooms

1/2 tablespoon olive oil (EVOO)

2 tablespoons chopped yellow onion

optional: 1/4 tablespoon red miso paste

Method: Saute mushrooms and onion until soft. Add vegetable stock or bone broth. Simmer for 5-10 minutes. Crush garlic and place in a blender with the stock or broth, miso and parsley. Blend and pour into a thermos or bowl.

notes: Garlic and miso should not be simmered- only blended. Garlic contains allicin which boosts immunity and miso contains probiotics which also boosts immunity
