Roasted peppers are easy to make, very nutritious and have a delicate sweet taste when roasted. Red peppers have high vitamin C content and are available all year round. They can be used as toppings for pizzas, sandwiches or as an accompaniment. 

So delicious with balsamic dressing and lemon thyme!

Ingredients:

4-5 red peppers or bell peppers

olive oil

1/2 tbsp balsamic vinegar

a sprig of lemon thyme

salt & pepper to taste

Method:

Heat barbeque to high.

Half peppers and remove membrane and seeds. Lightly brush the skin with olive oil. Place peppers skin side down on a very hot barbeque grill. Let the skin blister until black. remove peppers and place in a bowl. Cover the bowl with a plate for 30 min. Gently peel burnt peel from flesh. Cut peppers into strips and place in a bowl for storage. Add balsamic, herbs and seasoning.
