Shiitake mushrooms have a meaty flavour and are a good protein source for vegetarians and vegans.

These mushrooms also help to reduce blood sugar levels and reduce inflammation within the body. 



(serves 1)

120 g cooked wild rice

65g shiitake mushrooms 

135g spinach

1 garlic clove (small)

1tbsp ghee or olive oil

1/2 tsp grated ginger

1/2 tsp 5 spice

sea salt & pepper to taste

2 tsp tamari sauce



Slice and sauté mushrooms in a skillet with the ghee for 5 minutes. Add ginger, spices and finely sliced garlic and cook mushrooms until tender. Add spinach leaves and cook until just wilted. Add cooked rice.

Optional: Add tamari sauce for extra flavour.
